This recipe is the most decadent one we have on our blog (and requires a little more loving time). And yet it still supports a healthy gut and your cycle hormones. It's a modification of the beautiful clover ferments Jelly Tip slice and it's designed to be made when you have left over FOL blend.
Ingredients:
Base
- 1 cup of ground almonds
- 1/3 cup FOL Seed Cycle Blend
- 1/3 cup desiccated coconut
- 2 Tbsp coconut sugar
- 1/4 cup coconut oil (melted)
- 2 Tbsp cocoa/cacao powder
- Pinch of salt
- 2 Tbsp water
- 1 tsp vanilla extract
Filling
- 1.5 cups raw cashew nuts (soaked for 4-6 hours in cool water or 30 mins in boiling water)
- 2 Tbsp honey
- 3 Tbsp coconut oil (melted)
- 1/2 cup Cloved Ferments beetroot tonic
- 2 tsp freeze dried raspberry powder
- 1 tsp vanilla extract
Jelly
- 2 cups frozen rasberries
- 2 Tbsp chia seeds
- 1 Tbsp lemon juice
- 1 Tbsp honey
Chocolate Topping
- 1 cup dark chocolate
- 2 Tbsp coconut oil
Directions:
Base
- Preheat your oven to 180 • C.
- Mix all the dry ingredients together.
- Add the wet ingredients and mix until combined.
- Press into a lined 20cm x 20cm tin and bake for 15 mins.
- Set aside to cool.
Filling
- Blend all of the filling ingredients in a blender or food processor until creamy and pour over the base.
- Put in freezer to set.
Jelly
- Heat rasberries in a pan.
- Mash the fruit until smooth.
- Add chia, lemon and honey. Mix well.
- Let it cool down before pouring over the set filling.
- Put in freezer for 1 hour to set slightly (it doesn't need to be frozen).
Topping
- Wait until the jelly is slightly set.
- Boil a few cups of water in a small pan and place a metal bowl over the top.
- Melt the chocolate and coconut oil in the metal bowl and combine making sure not to burn the chocolate. (mix constantly)
- Pour evenly over the jelly.
- Optional: Add crushed roasted almonds on top.
- Put in freezer to set.
- Bonus tip: I like to crease the chocolate with a knife just before it goes completely hard to make cutting it easier.
Slice to your liking and serve chilled. It's best to slice the whole thing up and store in the freezer until you're ready for a snack - then take a slice out to thaw slightly and enjoy.
